Pastore has specialized in animal portraiture since 1989. She has photographed domestic, farm, and wild animals. Her portrait work appeals to people of all ages and backgrounds. Individually hand coloring her black and white photographs, Pastore portrays her subjects in delicate pastel shades.

She received her professional training in photography at the School of Visual Arts and the International Center of Photography in New York City. Her professional memberships include The American Society of Media Photographers and Professional Women Photographers.
